Friday August 16th– 11am – Official Ribbon Cutting and Grand Opening Kickoff
Join us as Hillsboro Mayor Steve Callaway cuts the ribbon on our new 21,000 square foot butcher shop and custom shop, right next to our café! We’ve been hard at work renovating this space to give you a better shopping experience and can’t wait to officially open with the support of our mayor and wonderful community.
Plus enjoy a bouncy house from 10am-6pm, free hot dogs from 11am-3pm, and samples throughout the day from our friends like Kelly’s Jelly, Thrive Sauce, and Smokin’ Swine BBQ Sauce!
Saturday August 17th– 12pm-2pm – Grand Reopening Party
Now that the hard work is done, it’s time to play! Visit The Meating Place between 12pm and 2pm on Saturday August 17th and enjoy a party the whole family can enjoy. We’ll have free hot dogs, a bouncy house for the kids, and invited our friends from 99.5 The Wolf to play music and join the fun. Plus our favorite hometown mascot Barley the Hop will be there too, and we’ll have your chance to win 4 tickets to see the Hillsboro Hops that night! Our new space is bigger and better than ever and we can’t wait to show it off. Hope you can join us!
That’s not all that’s going on that day! We’ll have the bouncy house running from 10am-6pm and the free hot dogs cookin’ from 11am-3pm, plus treats from our friends like Smokin’ Swine BBQ Sauce, Sugar’s BBQ, Marshall’s Haute Sauce, and Felton & Mary’s BBQ Sauce throughout the day.

Our current shop is located at 6495 NW Cornelius Pass Road and our expansion is right next door at 6585 NW Cornelius Pass Road. Cornelius Pass is closed for construction between HWY 30 and Kaiser Road, but the closure is north of our shop and will not affect accessibility to our store.

The Meating Place has been feeding Hillsboro and beyond with the highest quality meat for the better part of 40 years, and lately growth has been a constant. Owner Casey Miller first studied the meat trade under founder Steve Crossley, and when he re-opened the butcher shop and cafe in 2013, he quickly started outgrowing his space. After two years of constant renovations, he and his wife Annie exhausted all expansion possibilities and knew it was time to look at a new, larger space to move into.
As luck would have it, the perfect spot was right next door.
“We decided to expand our 7,000 square foot butcher shop and custom shop into a much larger 21,000 square foot space next door to better serve both our retail and our custom customers,” the Millers explain. “Our customer base has steadily grown in all three of our sectors – butcher shop, café, and custom shop. In order to keep up with the demand and quality of our products, we knew we needed a larger facility to provide the excellent service and quality we hold ourselves to.”
When the expansion is complete, butcher shop customers can expect a much larger selection of high-end meat, including charcuterie, ready-to-eat meals, a bigger selection of house-smoked sausages, larger variety dry goods, and even wine. Their popular café will soon have more room to serve and seat diners with fan favorites like their Elk Burger, Gouda Mac ‘n’ Cheese, and Breakfast Burritos. Finally, The Meating Place will increase their capabilities for custom shop customers, too, with a larger facility to process more wild game and livestock, better serving the multitude of local farmers who partner with The Meating Place.
After more than a year of construction, including all the headaches that come with it, the Millers are looking forward to the next phase of their business with an excitement only matched by their community.
“We are looking forward to getting back to running our business,” Casey says. “The construction phase is challenging and has consumed a lot of our focus, so we’re excited to return our focus back to offering great meat to our customers.”
